KFC chicken has always been breaded with flour, salt, pepper, and msg. If they’re not still using msg they’re using today’s equivalent. The “11 herbs and spices” has always been marketing BS. It comes in a bag full of chicken and some bloody water. Bag of dark meat and a bag of white mean. Original is rinsed breaded once and deep fried. Crispy is rinsed breaded and rinsed again and breaded and deep fried. I worked there. That eleven spices and herbs make it taste awful,i hate KFC for that,the best for fried chicken is only to put sweet paprika and salt,maybe a little bit of black pepper.
Im pretty happy with my process… Season chicken w/salt n pepper before adding to buttermilk. And in the buttermilk add one roughly chopped onion, a few garlic cloves and, yes, hot sauce! Stir, add chicken and let it sit in the frig for at least 4 hours. I like to let mine go overnight. The meat comes out so moist. To flour… dash of paprika, dash of cayenne, lemon pepper seasoning, garlic n onion powder and some kind of herb… oregano or basil or an italian blend. Dip chicken with flour.
